This is the salad I bring to potlucks and the one I make on Sunday for weekday lunches. Chickpeas, tomatoes, cucumber, red onion, parsley, feta, and a punchy lemon-olive-oil dressing. It takes 15 minutes to make, holds in the fridge for four days without going limp, and the flavors actually improve overnight as the chickpeas soak up the dressing.
The chickpea trick
Drain and rinse canned chickpeas, then dry them on a kitchen towel. Spend a minute pinching off the loose skins — it's tedious but it makes a real difference. Skinless chickpeas absorb the dressing better and feel creamier on the tongue. If you don't have the patience, fine, skip this step. They'll still be good.
The vegetables
Cherry tomatoes halved or quartered, English cucumber diced (no need to peel — the skin adds crunch and color), red onion finely diced and rinsed under cold water for 30 seconds to take the bite off, a generous handful of flat-leaf parsley roughly chopped, and crumbled feta. Kalamata olives if you like them, omitted if you don't.
The dressing
3 tablespoons good olive oil, juice of 1 lemon, 1 grated garlic clove, 1 teaspoon dried oregano, salt, pepper, and a pinch of red pepper flakes. Whisk it together, taste, adjust acid or salt as needed. The dressing should taste slightly too punchy on its own — it'll mellow once it meets the chickpeas.
The salt move
Salt the cucumbers and tomatoes lightly first and let them sit for 5 minutes before mixing. Drain off any water that pools. This keeps the salad from going watery in the fridge.
How to store and serve
Pack into glass containers and refrigerate. The flavors are at their best between 6 and 24 hours after mixing. Serve cold or at room temperature, optionally over a bed of arugula or with warm pita on the side. For a heartier lunch, add a scoop of cooked quinoa or some flaked tuna.
